Ratatouille
VEGGIES:
2 EGGPLANTS
6 ROMAS
2 YELLOW SQUASH
2 ZUC
SAUCE:
2 TBSP OLIVE OIL
1 DICED ONION (SPANISH)
4 GARLIC CLOVES
1 RED PEPPER (DICED)
1 YELLOW PEPPER (DICED)
*SALT AND PEPPER FOR TASTE
28oz CAN OF CRUSHED TOMATOES
2 TBSP CHOPPED BASIL (ABOUT 8-10 LEAVES)
HERB SEASONING:
3-4 TBSP CHOPPED BASIL
1 TSP MINCED GARLIC
2 TBSP CHOPPED PARSLEY
*SALT AND PEPPER
4 TBSP OLIVE OIL
DIRECTIONS:
- Preheat oven to 375
- Slice veggies into 1/16 inch rounds then set aside
- make the sauce by heating olive oil in oven safe pan over med-high heat. sauté onion, garlic and bell peppers until soft then season with salt and pepper. Add crushed tomatoes and stir. Remove from heat then add basil, stir then smooth surface of the sauce
- Arrange veggies in alternating pattern ontop of sauce from outer edge to middle
- For the herb seasoning mix basil, garlic, parsley, salt, pepper and olive oil in small mixing bowl then spoon over veggies
- cover with foil and bake for 40min, uncover and bake another 20min.
