Ratatouille

Ingredients:

Sauce:

Herb Seasoning:

  • 3-4 Tbsp Chopped Basil
  • 1 tsp Minced Garlic
  • 2 Tsp Chopped Parsley
  • 4 Tbsp Olive oil
  • Salt and Pepper to taste

 

Directions:

  • Preheat oven to 375
  • Slice veggies into 1/16 inch rounds then set aside
  • make the sauce by heating olive oil in oven safe pan over med-high heat. sauté onion, garlic and bell peppers until soft then season with salt and pepper. Add crushed tomatoes and stir. Remove from heat then add basil, stir then smooth surface of the sauce 
  • Arrange veggies in alternating pattern on top of sauce from outer edge to middle 
  • Mix the herb seasoning together, then spoon over veggies 
  • Cover with foil and bake for 40min, uncover and bake another 20min.
