Zucchini Caprese
Ingredients:
- 2 zucchinis
- 2 tomatoes, sliced
- 4 oz mozzarella, sliced
- 3 tablespoons olive oil
- 4 cloves of garlic, pressed through a garlic press
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt and pepper to taste
- basil leaves for garnish
Directions:
- Preheat oven to 450°F
- Wash the zucchinis and cut in half lengthwise. Use a spoon to remove some of the flesh.
- Mix the spices (salt, pepper, basil, oregano) and the garlic. Prick the zucchinis with a fork and spread the spice mixture onto each half
- Place the prepared zucchini in a greased baking dish. Bake for 15 minutes.
- Take the zucchini out and arrange the mozzarella and tomatoes on it, alternating as you go. Place back in the oven for about 10 minutes.
- Serve drizzled with olive oil and garnished with basil leaves. Enjoy!
