Zucchini Caprese

Zucchini Caprese - an idea for dinner or a party

Ingredients:

  • 2 zucchinis
  • 2 tomatoes, sliced
  • 4 oz mozzarella, sliced
  • 3 tablespoons olive oil
  • 4 cloves of garlic, pressed through a garlic press
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and pepper to taste
  • basil leaves for garnish

Directions:

  • Preheat oven to 450°F
  • Wash the zucchinis and cut in half lengthwise. Use a spoon to remove some of the flesh.
  • Mix the spices (salt, pepper, basil, oregano) and the garlic. Prick the zucchinis with a fork and spread the spice mixture onto each half 
  • Place the prepared zucchini in a greased baking dish. Bake for 15 minutes.
  • Take the zucchini out and arrange the mozzarella and tomatoes on it, alternating as you go. Place back in the oven for about 10 minutes.
  • Serve drizzled with olive oil and garnished with basil leaves. Enjoy!
