Game Day Guac

Championship Guacamole 

Ingredients:

  • 5 Avocados, peeled and pitted
  • 1 Lemon, juiced
  • 1/2 c. Onion, finely chopped
  • 1 c. Tomatoes, diced *
  • 1/2 c. Cilantro, chopped
  • 1 lb. Bacon, fried
  • 1/2 t. Garlic powder
  • Salt and pepper, to taste

Instructions:

  • Prepare avocado. Place the avocados and lemon juice in a bowl and mash with a fork. When you have a creamy texture, add the onion, tomatoes and cilantro.
  • Prepare bacon. Cut the bacon into squares with scissors and put it in a hot skillet and cook over heat medium for 15 minutes or until golden. Transfer to a plate to drain excess fat and let cool.
  • Prepare guacamole. Add the bacon, garlic powder, pepper, and salt to the guacamole and mix well.
  • To serve, put guacamole in a bowl and serve with tortilla chips or crackers (optional).

 

Nacho Average Guac

Ingredients:

  • 2 Avocados, cubed
  • 1 c. Nacho cheese flavored corn chips
  • 1/2 c. Green onions, chopped
  • 1/2 c. Queso fresco, crumbled
  • 1/2 c. Tomato, diced *
  • 1 t. Lime juice
  • Salt, to taste
  • Sour cream, to garnish

Instructions:

  • In a small bowl, slice avocados into cubes and stir in lime juice. Salt to taste.
  • Add green onion, queso fresco and tomatoes to guacamole mixture and gently stir until well combined.
  • On a large plate, evenly distribute chips. Top chips with guacamole and garnish with sour cream.

*We recommend using Roma tomatoes, they tend to have less juice and thicker skin!
